Ingredients:
Grated green papaya
Carrots
Bell pepper
Garlic
Onion
Ginger
Vinegar
Sugar

Directions:

Sautee garlic, onion and ginger
Add sugar and vinegar. Bring to boil
Add Carrots and bell pepper
Season according to your taste
Turn off heat. Add papaya.
Let it cool
Transfer to a container and refrigerate.

I am the queen of my own kitchen. Well, I know I am just exaggerating! What I mean is I am the queen of the kitchen in the sense that I am the one who does most of the cooking. Ever since we moved into this big neighborhood, I've made a point of passing out candy to the trick or treaters. Now that my kids are too old to go trick or treating themselves, I still love to get in on the Halloween fun that way. Plus, I can also dress up when I pass out candy, which makes it even more fun.

I also love to decorate my home for Halloween, so I thought that maybe I could try and come up with a creative thing to hang on my door for trick or treaters. I got some good inspiration from my clear tv for some decor and I decided on a wreath. It would be much easier to make than some other thing to hang on our doors.

I decided to make a wreath using candy corn and some other kinds of Halloween candy. I thought that would only be appropriate. I know that I won't be able to save it for next year, but it will just give me another excuse to do some crafts. There's nothing more that I love doing during my spare time than make some holiday crafts!

Prepping for My Parents’ Golden Wedding Anniversary

The main purpose for our scheduled trip to my home country come February 2012 is to attend the golden wedding anniversary of my parents. This will only happen once so I have promised that I will surely attend this joyous celebration of everlasting love. My siblings and I have already decided as to who will take charge of the wedding preparations, like the food, venue, photo and video coverage, flowers, church coordination and so many more. Thankfully, my part of the family occasion is to take charge of the cake. I am already excited and so is my whole family. 50 years of blissful marriage is a long wait, and yet, my parents have all raised us up as well and good persons.

If I could only give them a second honeymoon, I would surely give them a grand vacation and reserve them a Cape Cod rental. That would really be so nice, but as of the moment, our savings are just enough for our trip. But I do want my parents to enjoy the remaining days of their lives. All their efforts, hard work and sacrifices have already paid off. Now, we are giving back to them, what is due of them.

In one of the groups in Facebook that I belong to, we would discuss just about anything. The group that I frequent the most is the mommy blogger group where our dialect is common amongst us. The other day, there was a discussion about clogged toilet bowls caused by children playing with paper towels. One of the mommies said that her daughter screamed so loud when she saw that water was running furiously wild inside the bathroom and that the bath rugs were already soaking wet. The mommy friend said she had given all her might to unclog the toilet bowl, but to no avail. So she finally decided to call it a night and have her hubby check it the following day. If worse comes to worst, they would be calling the expert plumbers to do the job for them but of course, that would mean shelling out some extra precious hard earned money.

It does feel nice to belong to a group where we can share almost everything, where we can blurt out emotions, rant about our kids and our hubbies, and help each other in terms of our online jobs, blogging that is. One of the reasons of this chaos is the misunderstanding between the management and employees regarding work benefits, and that is to include salaries. Multinational companies are trying to save money in order to prevent bankruptcy. As a result, employee’s benefits and salaries are affected and some are even terminated from their jobs. This has lead to numerous strikes and work stoppages as employees protest for their rights as workers. Some have even turned violent resulting to injuries and worst, deaths.

One of the best bonding time me and my daughter have happens in the kitchen. I let her help me with things she can do with or without my supervision and she loves the idea. I love it too as it promotes her skills in following directions and she also learns how to live life as a grown up.

The most recent fun we had in the kitchen is when we cooked pancakes. I take care of pouring the batter into the pan until it is cooked and transfer it to the plate. Then the princess takes care of lathering some butter into the pancake. She loves helping me in the kitchen. I try not to leave her alone though because I know it could be dangerous. So we stopped what we were doing when hubby asked for the Haynes Repair Manuals to be brought to the garage where he was. Then we continued with our stuff.

When we were done, she called her dad and she was so proud to tell him that she helped me in the preparation of the pancake.

Cooking Shows

I admire these people who host cooking shows. I am not very comfortable cooking with people watching what I do. Same goes when there are other people in the kitchen. I feel being spied on and if they say anything about how I cook, I will surely get distracted. And so I bow to these people who cook in front of the camera, or even with an audience.
One time, I chanced upon a cooking show, I cannot remember which as I watch a lot. Their live audience was working people. During the whole show, they prepared dishes that are easy and quick to do to suit a corporate slave’s busy schedule. There were lawyers, nurses, and even accountants from an Accounting Firm In New York in the audience.

I am no corporate slave but I totally appreciated the dishes they did, specially that home-made chicken tortilla pie. A mom’s life is also busy having to manage several departments at home and quick recipes are always appreciated. I made my version of that tortilla pie for my husband and daughter and it was a blockbuster!

I was doing my daily routine of preparing our dinner when all of a sudden my top stove burner just stopped working. I have 4 burners but I use the biggest one most of the times. I didn't have a choice but to use the smaller one to finish what I was cooking.

We called the apartment management to report that our top stove burner stopped working. I am just very glad that our apartment management sends the maintenance guy few hours later. In just a matter of minutes he was able to fix it. I was happy to have my stove back.

After he repaired the stove, I decided to do a little spring cleaning in the kitchen. I have noticed that the kitchen needs good scrubbing. It is always a hardwork scrubbing the kitchen floors. Last week, while doing shopping in the mall, I happened to pass by a small boutique displaying a lot of pins and ribbons. What attracted my attention was the presentation of the products. The pins and ribbons were well arranged and come in bright colors. There were many different shapes and sizes. In addition, there were plenty of designs that were either unique or amusing.

A few moments later, curiosity found me keenly examining the pins and ribbons one by one. It dawned to me that the products I’m looking at were not just mere accessories but a powerful tool to promote social equity. I got interested most in the displayed Autism awareness products. It got my special attention because it made me realized that autism is not a disease which I think others believed otherwise. Rather, it is just a form of behavior where it can be treated in a lot of natural ways. One possible solution maybe is to understand and treat autism as a normal situation. It seems to me that the problem with our present society is lack of awareness and indifference towards persons with autistic tendencies.

The pins and ribbons promoting awareness for autism made me realized that information about autism can be one of the cures as it will increase social awareness among people. Because of my awakening, right there and then I brought 5 pins and 2 ribbons. My Perfect Party

Organizing a house party is no easy task. This was my first hand experience when our family hosted an early dinner for my husband’s officemates in celebration of our wedding anniversary. Our primary concern was the kind of foods and drinks we will serve to our guests. After a thorough planning, I and my husband agreed to enlist the services of a local restaurant. Immediately, we inquire about the menu and we were pleasantly presented with an array of delectable choices that gave us a hard time picking the suitable menu for our party. The restaurant manager also suggested some drinks compatible to the type of foods to be served. Frankly speaking, we spent almost two hours in the restaurant before we came up with our menu. Nevertheless, we were assured that our choice would surely make our party worth remembering.

Come party time. All our guests arrived just in time when all the foods are ready to be served. The waiters were all well-trained as they started giving the foods. As everyone started to eat, we already heard some pleasant comments on the foods being served. The beef steak was perfect. The roasted turkey was excellent. The sashimi was very fresh that you can still smell its appetizing scent. But what surprised the most was the Bordeaux Wine. It was served chilled and poured in clear wine glasses. It did make an impression on our guests that several of them inquired what makes a Bordeaux wine different from other wines. The waiters gladly provided the details. Indeed, we realized that the restaurant manager was correct in his expectations about Bordeaux wines.

For the past few days, it has gotten cooler. I know it is getting cold because my daughter told me, "Mommy I need a jacket". When I gave her a jacket she said, "Much better".

At night, my daughter requests for socks. I guess she has not adjusted to the cold weather yet. Anyhow, I think I need to invest in some good electric blankets pretty soon if I want my parents to be here. We wanted to petition my parents. I am sure they will have a hard time adjusting to the coldness of winter time. The electric blanket will help them be comfortable.

Dreaming of Hawaii

In my younger days, I remember seeing often t-shirts with prints on them Maui, with palm trees, the setting sun, the beach, an bikini-clad woman lounging in a beach chair sipping a cold drink; a picture of paradise. Since then, I would always think of wanting to go to Maui, I knew that it is Hawaii and that place is just one of the many places I would love to visit. I have always that view of a picturesque Hawaii in my mind. And as if the heavens above heard my wish, I am now closer to Hawaii, well, not by distance, but with the chance to visit that place. Living here in the United States gives me the privilege to travel to all its territories without hassle and trouble.

The only thing that hinders me from going to Hawaii is time and money. I would like to see the different parts of that island paradise, or perhaps rent Maui Condos and stay for a few weeks, just soak in the sun, have fun and just be me. It’s quite difficult to be traveling with little kids, so if given the chance, I would like to travel alone, I sound so selfish right? Or let’s change that, I’ll travel with my husband and have our second honeymoon in Maui, Hawaii. Now that sounds fun.

America is one of the countries where Halloween is celebrated with a blast. Children and adults alike go to costume parties and do some treat or tricking. Last year, I even saw teenagers wearing Sexy Halloween Costumes. But what is Halloween really?

I read that Halloween originated as a pagan festival in parts of Northern Europe, particularly around United Kingdom. In many European cultural traditions, Halloween is a time when magic is most powerful and spirits can make contact with the physical world. In Christian times, it became a celebration of the evening before All Saints’ Day. It was brought to the United States by immigrants from Scotland and Ireland. Some symbols associated with this celebration are skeletons, skulls, ghosts, spooks, gravestones, wizards and witches, spiders, black cats, bats and pumpkin. Until now, I am still wondering why pumpkin became a significant symbol of Halloween.

During this time, many children and adults dress up themselves in fancy costumes. Some celebrate this among families and friends and some holds large community parties. Kids usually bring along a pumpkin shape basket where they put in the candies they get from trick or treating.

Speaking of this, I have yet to ask my little girl what she wants to dress up with this coming Halloween. I have received several informal invitations already but I have yet to let the little princess decide where we are going since they are in the same date.

Christmas Related Activities

It is less than a hundred days before Christmas and I know everyone has started with their own preparation for this much anticipated event. Having a child in the house makes every Christmas more special even when she does not fully understand what it really means yet. As early as now, she told me she wanted to help in preparing our menu, the gifts, the Christmas tree and anything that she can be of help. I am glad that she is not like the other kids who just care about the presents.

This Christmas will also be a one of a kind of us. We have planned several family holidays over Christmas. Some family and friends are arranging get-togethers in their own places and one of my friends is visiting her family in Europe. They have booked their stay at a Self-catering holiday homes in Rome.

Spending this special occasion with our family and relatives will surely become a blast! I told some of my relatives to check on travel guides if necessary so they can plan things accordingly. My little girl is really excited because she does not get to see her cousins that often.

In the meantime, I will continue researching on what we can cook together with the kids. It would be a lovely bonding activity for them as well as for us moms. This coming holiday breaks will be a lot of fun for us.

I talked to my older brother the other night and I have mentioned that I will be sending a box soon. He asked me if I can send him good pairs of jeans. I gave him an option of the following: levis jeans, dkny jeans, or carhartt jeans. He obviously go for levis as he is not familiar with the other two that I have mentioned. I explained to him that maybe he wants to choose the carharrt as they are known for its quality. Well, he didn't need more convincing as he just told me why don't I just buy him 3 pairs, one of each! huh? I was like oh no! not 3 pairs!!! I will buy him at least 1. I am not sure if I can afford to buy him 3 as I will also buy for my other brothers.

In a year or two, my daughter will be entering her preschool years. In one of my readings, I’ve learned that preschoolers do not need many toys. Their imaginations are keener than they will be at any time in their lives, so they enjoy games that use imitation, such as playing house. They imitate what they see their parents are doing: eating meals, mowing the lawn, cleaning the house, arguing and so forth. Preschoolers pretend to be teachers, cowboys, firefighters and store clerks. This is also a crucial stage for her growth and development. I am just glad that I chose to be a stay-at-home mom so that I can see and witness her growth first hand. Right now, I am preparing her for what lies ahead in preschool, I have already bought childrens educational toys for her to play with like colorful blocks, interactive play notebooks and so many more. I also bought coloring books for her to practice her hands in holding crayons. Every day, I see changes, improvements and developments and nothing can compare to the joy and happiness that all these bring. They make me say that I have a done a good job, although I am still beginning and the journey to life is endless.

Our world is stricken with diseases, illnesses that hit our soul, those sicknesses that know no cure except our Creator. When we are plagued with problems, when we hit rock-bottom, our families and friends may not be able to comfort us, we can always turn to God. We tend to ignore His calls, His word, we get busy with our everyday lives, but He is just there, listening, watching, knowing all our moves, our motives, our ambitions, our heart’s desires, our deepest secrets. We can never hide from Him. He is just waiting for us to draw near to Him. Our Spiritual Wellness is His concern, He already knows our physical and material needs, but He wants us to turn to Him, He wants us to cry out to Him.

In my darkest hours, He comforts me and His word guides me. He gives me strength, wisdom, understanding and knowledge. He knows what I need, I only have to ask him.

I may sound so melodramatic in this post, but this is the truth that I’ve learned. All things in this world is temporary, the only thing we can be sure of is that there is a God that loves us, who will never leave us nor forsake us.

Travel to Other Parts of the World, On Hold

With our scheduled travel to the Philippines in February, other out of the country trips will have to wait. But honestly, I would like to travel as much as I can before my daughter starts schooling because once she is in school, our expenses will be partly going to her school fees, tuition, and other school needs. Before she enters school, I would like to see some parts of the world like the Latin Americas, particularly Chile. Last year’s mining tragedy brought Chile into the limelight and I wonder if the Chile tourism industry has boomed after that. I would like to try patagonia tours and see Chile and probably get a glimpse of that mining area. Or if not, try to travel puerto montt and find out what’s in store for us there.

Well for now, this will only be in my bucket list but I really do wish to travel before another pie gets into our family budget, and that is my daughter’s schooling. But then I guess I can wait. By that time that we get to see the other parts of the world, my daughter will be big enough to appreciate the scenes and views. By that time, I would have saved a lot from my earnings online. So, traveling will have to stand by for now.

The Need for an Eyeglasses

As a person who normally works in front of the laptop for hours, it did not came to me as a surprise anymore when I was told I needed to get eyeglasses already. At first I did not want to make time so I can finally have my prescription glasses because I am so busy with so many things. But when I learned that like anything else, this can be done with a few clicks on my keyboard, I went for it.

Like any other stuff that I own, I wanted my glasses to fit my personality, from the color, the shape of the frame, and even the made of the lens. I want it to be fashionable, stylish and up to date. I also take into consideration the price and the quality of my choice. I want something that is comfortable to wear, something that I can wear for long hours without necessarily feeling it in my ears or in front of my eyes. And while I believe in practicality, I know that I should always get what’s my money’s worth. I know that cheap does not always mean poor quality and that expensive is not always equated to durability.

If you think that my requirements are impossible, I am proud to tell you that I got exactly what I wanted. ;)

Weight Goal

Some people just won’t lose pounds no matter what exercise or dieting they do. It could be pretty exasperating, especially if you need to lose weight for something, like an upcoming wedding or another very important event where you have participation. I have a friend who has exactly this case.

This good friend of mine is getting married in a few months. Of course like any other bride, she wants to look good in her wedding gown. While her designer and couturier designed a really flattering gown for her, she still wants to lose fat quickly, safely and permanently. I have suggested diet pills with ephedra to her because I read that it is very effective. She has tried many pills before but to no avail. She just ended up wasting her hard-earned money. At first she did not want to try it anymore as she sort of lost trust on diet pills. But then again, she has a goal. She wants to be slimmer and more confident when she walks down the aisle. She said that fiancé loved her so much for whomever she is, whatever shape she has. And for this, she wanted to show how grateful she is to him thus she wants to cut some pounds as a surprise.

Shrimp and Pineapple

My friend made this one. Surprisingly this, is very delicious. I have never thought of adding pineapple to shrimps.

Ingredients:
Shrimps
Ketchup
Butter
Pineapple tidbits
garlic salt
black pepper

Directions:

Saute shrimps in butter
Add ketchup, pineapple tidbits.
Season with garlic salt and black pepper
Cook until done
Serve

Kitchen Must-Haves I Want to Own

I have been eyeing for something I really want to have in my kitchen. It’s an appliance and a gadget that would surely make my dishes more mouth watering and delectable. But just looking at the prices of those that I really want just makes me think that I will only have to dream of those two. I just couldn’t afford to buy them now, and if I do, I would go broke. I have really wanted to get hold of those two wonderful kitchen effects but unfortunately, I could not, just yet. We are still on a strict budget since we will be going for a trip to my home country come February, and if I buy them now, we would have no enough and extra cash for our trip.

If and only if I could not hold myself from buying them, then I guess I would have to look for a payday loan store and get myself easy payday loans. I sound so desperate right but I know it’s for my family and that if I have those two in my kitchen, I can be a better cook than I am right now. I know I can feed my family with very good meals and applying for payday loans will help me reach my goal of serving my family good food. I just hope, really hope I can have those two someday.

Honeymoon Trip

After few years of being together, my closest friend is getting married. I am very excited for them as they finally decided to tie the knot. I really wish I can attend the wedding ceremony. My friend is begging me to come home to be the matron of honor on their wedding. She understands why I can't make it though in our hearts we know that we would want to be there for the glorious occasion. Believe me, if I have the money I will come home and be with her in her most important day.

Anyway, I am still part of the wedding as we still talk about it and I help her through my suggestions and ideas on what to do and all other stuff. Last night, I was surprised that her fiance contacted me through yahoo messenger. He asked me of some ideas for a great honeymoon trip. Since he knew how close I am to his bride to be he wants to ask me if a trip to Hawaii will be a great honeymoon gift. I was like "what???".... I was amazed and excited! Of course, it is a great idea. I told him that I can give him sites that offer hawaii cruises and he can decide which one he wants. Oh.... I am sure my closest friend will be surprised and will be ecstatic when she finds out about the Hawaii trip. Should I spill it to her? Of course not! I don't want to spoil the best surprise!

Cigarettes have always pose health risks and dangers to the users. But it presents more hazard and peril to the non-smokers. Second hand smoke is much more precarious. Lately, in the capital city of my home country, the local governments have been strictly implementing a No-Smoking Ban in the public places. I am so in favor of this, I myself do not like to inhale that stinky cigarette smoke, much more being huffed and puffed by someone, that will totally irk me, and who wouldn’t.

Amazingly, the Electronic Cigarette has been invented. I’ve read a lot of good reviews about this clever innovation. They say that using the electronic cigarette is one effective way of withdrawing from nicotine addiction. What’s good about this “gadget” is that users can infuse flavors to the component use to simulate actual cigarette smoking. The smoke is safe from nicotine thus eliminating the threat of second hand smoke. It is also rechargeable so users can bring it anywhere they go.

But still, traditional cigarette or the electronic cigarette, it is still smoking. I can never blame nor judge people for being addicted to it, I just hope that they will be responsible enough to be not huffing and puffing anywhere.

When my husband and I, along with our daughter went into a shopping mall, we incidentally bumped with someone I knew way back in college. She was actually my classmate ten years ago. I was quite ecstatic seeing her for the longest time! We had our quick exchanged of our hi’s and hellos but had to leave very soon because she was in a hurry that time for a business meeting. When I tell my friends back in Philippines that I can now cook different dishes, most of them are stunned. They can't believe that I am now the queen of my own kitchen. I used not to know how to cook except boiling water (exaggerating here!).

I have attended many lectures when I was still in the corporate world. It is amazing how beautiful podiums can help make the speaker speak with confidence. I guess it helps that you have a sturdy place to lean on while speaking in front of many people. I know for myself that when I present a report when I was still in school, I like to have a very nice podium when presenting. I prefer podiums with plenty of room for all my audio visual equipment. Podiums serve as a very powerful presentation itself.

Veggies and Shrimp in Coconut Milk

Ingredients:
Coconut Milk
Shrimps
String Beans
Okra
Eggplant
Onion
Ginger
Black Pepper
Garlic Salt

Directions:

Wash and cut string beans, okra and eggplant
In a casserole put the string beans, eggplant, onion, ginger and coconut milk.
Season with garlic salt and black pepper
Bring to boil. When the veggies are getting tender add shrimps and okra.
Cook until done.
Serve.

I was thinking of what to cook for today when I felt the urged to flick the magazine near me. At first I thought it was wrong move because I keep on seeing clothing for girls, loads and loads of them! There were mini dresses, full-length dresses, cute shorts, trendy tops and even accessories! I skipped many pages already but I just cannot stop myself from browsing it. It looked like a fashion catalog! I even saw womens jeans that are on sale! Arrgh!

I was so close to slamming the magazine back where it was originally located so I can concentrate on what to cook when I saw a recipe section! Talk about a well-rounded magazine, eh. There were several recipes posted but only one of them suits the ingredients I have. And God knows how thankful I was because I am really running out of ideas! I ended up cooking Pininyahang Manok (Pineapple-Chicken Casserole). I was a bit hesitant at first because the mixture has pineapple and milk. To my surprise, it tasted good! It is new to my family’s taste but it was a total hit! Thanks again to that magazine! Hahaha! I will post the recipe and pictures soon.

ME Time

If there is one thing that I really miss doing in this life of mine, that would be being a couch potato. You see having to run a household can take up most of my time and energy. There are the household chores, from cleaning the house, laundry, and ironing, to cooking. Then there is my very active toddler. Just teaching and playing with her can drain me to bits but no, I am not complaining. These were my choices and I do not regret any of it.

So one time, I had a chance to rest a bit. I turned on the television and looked for a foodie program. That is something I always look for when I get the chance to sit in front of the television. I find comfort in watching how foods are made. To me it is like hitting two birds with one stone. I get relaxed when I watch these shows and I learn new recipes along the way. This time though, I did not learn a new recipe. Instead, I got inspired to save for eco-friendly kitchen gadgets just like what they use at Time Square Hotels . The pans and pots were all pretty, not to mention made of materials that are Earth-friendly. They are quite expensive though but I am sure they are worth the price. Maybe that is something I could give myself for Christmas.

Anniversary Gift

I don't have a lot in life but I know I am blessed. I can't ask for more because I know God has showered me the best things in life that I can ask for. It is true that I still want some things - material things specifically, but those are all but wants. I can live without them. What matters most is I have all the things that make me happy. I am blessed with a husband who understands me, takes good care of me and loves me unconditionally. We are given a daughter that makes us smile and makes our day complete. I have great family that will always be there for me and I have friends that are for keeps.

As I look at my husband and my daughter while they are peacefully sleeping, I can't help but stop and thank God for what I have. They are my joy.

Oh, yeah! I am being sentimental. I just can't help but be thankful. There are so many things that I should be thankful for. In few month, hubby and I will be celebrating our 5th wedding anniversary. Time flew by so fast. Five years of great marriage. The coming occasion gives me another reason to shop. I need to find a good gift for my hubby. So far, my first choice is giving him a watch with an engraved message in it. I was looking at Invicta Men Watches and I think they are really good. I remember during my college days, thesis making and oral defense were two of the most dreaded school requirements in order to graduate. I remember spending sleepless nights writing about our chosen topic for the thesis. The most tedious part was collecting, gathering information from the questionnaires and surveys done and then drawing up conclusions from it. Back then, everything was done by pen and paper.
