Chicken and Broccoli

This is my lunch for today, chicken and broccoli.

Ingredients:
Skinless chicken breast (sliced in bite sizes)
Broccoli
Onion
Garlic
Olive Oil
Salt
Pepper

Directions:
  1. Sautee garlic and onion
  2. Add chicken and cook until done
  3. Add broccoli
  4. Season with pepper and salt
  5. Remove from heat and serve

Roast Chicken (Lechon)


This is one of the best roast chicken. My brother in law Danny cooked this. This takes a while to cook.

Directions:
Marinate whole chicken overnight. Roast over fire for 1 1/2 hours or until golden brown and done. Serve.

Kung Pao Chicken

Kung Pao Chicken is one of hubby's favorite. It is hot and spicy which is really perfect for a cold weather.

It is made of chicken with carrots, mushroom, pepper, young corn, water chestnuts and topped with Peanuts.

Sesame Chicken

I ordered this at a Chinese Restaurant. This is good. It is made of chicken strips fried in a batter. Garlic sauce is added and topped with sesame seeds.

Popeyes

This is the first time that I eat Popeyes. It is delicious.

We decided to order the 16piece meal. 16 pieces of assorted mild chicken, a side of french fries, cajun rice and mashed potato with gravy. This meal comes with free biscuits.

As this is the first time that I have tasted Popeyes, I have to tell you that it is really good. The biscuits are excellent and the chicken is awesome.

You can ask my daughter Andrea and she will vouch for it as she ate even the leftovers.

Chicken Feet


For some this looks gross. But for us (most Filipinos), this is a treat! Chicken feet is crunchy and yummy.

I don't cook this because it is too much work. Yes, I have a lazy side on me too (lol). My friends love to do this and I will gladly eat when they cook this.

KFC / KGC

Used to be we only heard the word KFC but now you can call them KGC. From Kentucky Fried Chicken to Kentucky Grilled Chicken.

This is what we had few nights ago. A Bucket of chicken in crispy and in original. The sides were french fries, baked beans and mashed potato. It also has free biscuits.

Honey Chicken


When we eat at our favorite chinese place, Dave always order something new. Because their serving is more than enough for two persons we always share whatever Dave decides to order. As for Andrea she always have her Egg Drop Soup. I usually order a vegetable dish and Lo Mien.

The last time we ate out, Dave ordered this honey chicken. Crispy and sweet. Delicious.

We always have a leftover when we eat out thus I always have food the following day.

Is Chicken Skin Bad For You?


Chicken skin adds calories and fat to an otherwise lean meat, but it also provides extra flavor, holds in moisture and makes a perfect pocket for dry seasonings rubbed under the skin.

When I baked chicken, I usually rub some butter under its skin to make the meat very moist and tender. When grilled properly, the skin of the chicken becomes crisp as fat drips away.

If you are concerned about fat or calories, remove the skin; otherwise live a little and indulge in its crackly, savory flavor. I do and it's yummy!

Sesame Chicken

Last weekend we went to have fun at Tuscaloosa, Alabama. We just goof off the whole day and have fun. We dined at Charley's simply because I wanted to experience the food at Charley's.

I ordered sesame chicken. It was good but the problem is it is not really a sesame chicken... it is more of terriyaki chicken over pilaf rice. I can't complain as it was spicy and really good.

Garlic Chicken

Ingredients:
Chicken breast (sliced)
garlic
onion
bell pepper
carrots
broccoli
young corn
water chestnuts (sliced)
bamboo shoots (in can)
olive oil
pepper
soy sauce
garlic sauce

Directions:
  • Sautee garlic and onion. Add chicken. Cook until chicken's color becomes white.
  • Add carrots, broccoli, young corn, water chestnuts and bamboo shoots.
  • Season with pepper, soy sauce and garlic sauce.
  • Cook until vegetables are almost done. Add bell pepper and cook for another 2 minutes.
  • Serve

Grilled Chicken Drumsticks

Dave cooked dinner for me last weekend. All weekend he was the chef of my kitchen. He cooked a very tasty bbq chicken drumstick in our grill. It was so good and you can taste the charred in it which I like.


Ingredients:
chicken drumsticks
pepper
bbq sauce

Directions:
  • Remove the skin of the chicken
  • Season with a lot of black pepper
  • Grill for 35 minutes, flipping every so often
  • Brush with barbecue sauce and grill for another 10 minutes
  • Serve

Chicken Pot Pie


We have a delicious dinner. Terri made a chicken pot pie. I was too busy with my computer that I forgot to keep an eye on how she made it. She didn't follow any recipe she just made it. It was really good.

Oh by the way, it is her birthday tomorrow.... Happy Birthday Terri! We love you! and thanks for the wonderful dinner!

Chicken Afritada


I am not really a fan of chicken afritada but some of my friends love this so I cooked this during Andrea's bday Party.

Ingredients:
Whole Chicken (cut into pieces)
3 potatoes
3 carrots
2 bell pepper (i use yellow and orange because it was what I have in our fridge)
1 small can tomato sauce
1 can chicken stock
1 big can sweet peas
garlic
onion
salt
pepper

Directions:
  • Saute garlic and onion. Add cut up chicken
  • Add tomato sauce, and chicken stock. Season with salt and pepper. Bring to boil.
  • Simmer chicken for 20 minutes or until almost done. Add potatoes and carrots.
  • Simmer for another 10 minutes.
  • Check if veggies are done (if not continue simmering until everything is well-cooked.
  • Add sweet peas and bell pepper.
  • When pepper is cooked. Remove from heat
  • Serve

Food Trip Friday: Oven-Baked Crispy Chicken


For this week's Food Trip, I wanted to have a crispy chicken but without frying it for a healthier dish. I decided to oven-baked a crispy chicken with the use of Panko bread crumbs.


Ingredients:
Chicken drumstick
garlic salt
pepper
Panko bread crumbs

Directions:
  • Preheat oven to 350F
  • Wash Chicken and Season with garlic salt and pepper
  • Roll over in breadcrumbs
  • Put in baking pan and baked for 1 hour.
  • Serve.

Stir Fry Chicken with Mushroom and Broccolli

I have been trying to find a new way to cook chicken. I don't want to be burnt out eating chicken so I wanted some variations. I came up with cooking the chicken with mushroom and broccolli .

Ingredients:
Chicken breast (sliced in bite size)
bell pepper (sliced in strips)
carrots (sliced in strips)
mushroom (slice half)
broccolli (florettes)
cooking wine
soy sauce
corn starch
pepper
onion
garlic powder
water

Directions:
  • Marinade chicken in soysauce, cooking wine, black pepper, garlic powder and corn starch. Set aside. Marinade for at least 30 minutes.
  • Sautee onion and add marinaded chicken. Mix well and add a little water. Bring to boil and add carrots. Cook for two minutes.
  • Add bell pepper, mushroom and broccolli. Cook for another two minutes. Season with salt if needed.
  • Serve while hot.

Baked Chicken with Rosemary


For our dinner last night, I decided to bake a chicken with rosemary. When we went to Mom's last weekend, I cut some rosemary from her garden. I love the smell of rosemary.

Ingredients:
Whole chicken
garlic salt
garlic powder
butter
pepper
rosemary

Directions:
  • Clean the chicken thoroughly. Remove excess fats.
  • Season the chicken with garlic powder, garlic salt and pepper including the inside cavity.
  • Brush butter all over the chicken and insert ample amount of butter under the chicken skin and put some in the chicken cavity too.
  • Sprinkle rosemary all over the chicken and put more rosemary inside the cavity.
  • Bake uncovered at 350F for two hours
  • Serve.
While waiting for the chicken to be thoroughly cooked, I can smell the aroma of the rosemary all over my kitchen. It smelled so good!

Grilled Chicken Leg Quarters

I love buying chicken quarters because this is the cheapest cut of chicken that I can find. Besides, me and my friends like grilled chicken so I decided to make some.

Ingredients:
Chicken Quarter (remove fat)
Garlic
Garlic Salt
Pepper
Lemon
Soysauce

Directions:
  • Marinade chicken overnight.
  • Grilled in slow charcoal fire.
  • Serve.

It is very easy right? Please remember to cook the chicken thoroughly.

Chicken Barbeque in Oyster Sauce

Kat of Mom's Place, blogged about this recipe. When, I saw it, I know I have to try it for myself. Thankfully, I have all the ingredients in my kitchen to make this recipe. I made some little variations though. Check Kat's recipe here.

This recipe is different but I like it. Dave also like this, he ate his share. Dave and I agreed from the start that we should tell each other if we don't like the food. If Dave does not like what I cook, he tells me and I don't mind at all. This is part of our married life, adjusting to different things especially the food. Since we came from two different culture, obviously are food preferences are different.

Anyway, here's my version of Chicken Barbeque in Oystster Sauce:

Ingredients:
Skinless chicken thighs

Marinade:
water
oyster sauce
spring onion (chopped)
garlic powder
black pepper
ginger (grated)
sesame seeds
sesame oil

Directions:
  • Mix all the ingredients for marinade. Add chicken.
  • Marinade overnight

  • Baked in 350F for 1hour
  • Serve

Skinning Chicken

Cooking skinless chicken has become popular because it is healthier. Skinning the chicken before cooking can reduce fat thus, it is easy to enjoy the meal. A skinless chicken can readily absorb the flavors of marinades and cooking sauces.

Grocery store sells skinless chicken for a higher price. I prefer buying chicken with skin on and do the skinning myself. This help me save extra amount of money.

Cold chicken is easier to skin, it is important to plan ahead.

Here's how to skin chicken:
  • Freeze the chicken pieces just until firm, but not hard.
  • Grasp the skin with a clean cotton kitchen towel to improve your grip. You can also use a clean piece of paper towel.
  • Take the towel and pull the skin away from the meat.
Tips:
  • Be sure to dispose the chicken skin properly.
  • Launder the towel after using
