Fried Dried Anchovies

This is my dinner for tonight! Fried dried anchovies dipped in spicy vinegar! Yummy! It is very easy to cook this. Just heat olive oil and when it is heated put the anchovies constantly stirring until it is crispy.

Frozen Dried Anchovies


I am excited to cook this. It is a frozen boneless dried anchovies. This is the first time that I will be able to eat boneless anchovies. Usually, we buy whole dried anchovies so it means it includes the head and the bones.

I wonder if this will be good. I will surely let you know when I will be cooking this.

Crappie



Crappie
is considered to be the best tasting fresh water fish in the world.




This fish is our catch last weekend. I can really say that this is the best tasting fish we ever caught. We are looking forward to our next fishing trip this weekend and hopefully we will catch more crappie.

Two types of crappie live in Alabama, black crappie and white crappie, with hybrids of the two occurring naturally some lakes

Fish in Coconut Milk


I love fish cooked in coconut milk. It is easy and very yummy.

Ingredients:
Fish
Coconut Milk
Onion
Tomato
Ginger
Lemon
Pepper
Garlic Salt

Directions:
  • Wash fish thoroughly and pat dry.
  • Put the fish in a big casserole, top with sliced onion, tomato, ginger. Add coconut milk, squeeze one lemon and season with garlic salt and pepper.
  • Bring to boil and simmer until fish is cooked and spices are tender.
  • Serve with rice.

Fish and Pepper

Fish Paksiw! Yummy topped with a lot of pepper... extra yummy!

This dish is very common to Filipinos. This dish doesn't require a lot. It is just fish cooked in vinegar with a lot of spices. Spices can vary depending on what is available in your kitchen. Usually you just cooked it in vinegar with garlic, onion, ginger, salt, a little oil, and pepper. Who wants a piece?

Salmon and Asparagus


This is what I had for dinner last night. Pan fried salmon with broiled asparagus on the side. Yummy!

Directions:
(Salmon)
  • Wash salmon fillet and pat dry with pepper towel
  • Season with garlic and salt
  • Pan fry on olive oil and sprinkle with parsley
(Asparagus)
  • Wash asparagus
  • Season with olive oil and pepper/salt
  • Broil

Salmon Soup


I have had the luxury of eating fish almost everyday for this week because we went to the fresh seafood market the last weekend. I purchased different fish and vegetables and some other Filipino goodies (dried fish, shrimp paste, lucky me noodles and more).

This soup is made of salmon head and some sort of pechay. This is actually not a pechay that we are used to but I guess it is a different variety. I looks like a skinny pechay to me thus I call it pechay.

This is one of the simplest soup one can make. Just boil the water with onion and ginger. Add the salmon season with salt and pepper. When the fish is thoroughly cooked add the vegetables. Served with rice, this is just perfect!

Silver Fish

We got silver fish. For those who doesn't know what a silver fish is, this is how silver fish looks like:
This is really good for "torta". So we cooked a tortang silver fish...

Ingredients:
Silver fish
corn starch
egg
pepper
garlic salt
oil for frying

Directions:
  • Wash the silver fish using a strainer
  • Beat egg, add cornstarch and mix thoroughly
  • Season the egg cornstarch mixture with pepper and garlic salt
  • Mix with the silver fish.
  • Heat oil for frying and fry in small amount until brown
  • Serve with vinegar

Roasted Mackerel Tuna

Yes... I envy my sister because she was able to feast on these while she went home....

This is a roasted mackerel tuna. In our language we call it "tinap-an"! A fresh mackerel tuna is cooked over charcoal. It is cooked higher than when it is grilled. The fish doesn't touch the charcoal fire to avoid burning. These smells heavenly!

This is sold mostly in the streets in the coastal areas of our province. This is really good when you eat plainly with filipino dipping or you can also put this in your vegetable soup. Whichever, I know I want to eat them!

Grilled Milkfish

Milkfish is the national fish of the Philippines and it is favorite to many. When we had our house blessings few weeks ago, they send me pictures of it and of course they included what they prepared.

They grilled milkfish... one of our family's favorites...

A grilled milkfish won't be complete without the sauce in it. The sauce is a mixture of vinegar, soysauce and small bits of ginger, onion and tomatoes.

Now who is hungry? (Raising my two hands!)

ButterFish Soup

Fresh fish in soup = heaven!

For people like me who is used to eating fresh fish, it feels like heaven to get fresh fish that is good to cook for fish soup. I can only buy this kind of fish when if I go to Atlanta that is why when I got home, I made this soup for my dinner.

Ingredients:
butter fish head
bokchoy
onion
spring onion
ginger
tomato
salt
water

Directions:
  • Put water in the casserole and add ginger, tomato, onion. Season with salt and bring to boil.
  • Add fish head. Cook until the fish is almost done.
  • Add bokchoy and spring onions.
  • Cook until vegetable and fish are cooked thoroughly.
  • Serve with rice!

Butterfish and Spinach Vine

I haven't had ALUGBATI or Spinach vine since I moved here in 2006. Yes, that was long time ago when I last tasted the wonderful taste of Spinach vine. I was so elated to find this vegetable when we went to Atlanta. When I got it, I can't wait to cook it with my butter fish.

Fish soup and vegetables are just so irresistible to me.

Ingredients:
1pc butter fish
Spinach vine
onion
tomato
ginger
lemon grass
salt
water

Directons:
  • Combine water with onion, ginger, and tomato. Bring to boil
  • Add fish. Season with salt and add lemon grass
  • When fish is cook, add the spinach vine until done
  • Serve

Pompano

Last Sunday, we went to Whole Foods Market to buy fresh fish. I was not disappointed as there were plenty of fish to choose from.

I bought fresh whole pompano fish.


When I got home, I made fried fish for dinner. Paired with tomato/onion salad my dinner was so good that I felt like I was in heaven (lol). I love eating fish but sometimes, whole fish is just so expensive. The pompano costs me more than I would love to pay... but it was so good that I forgot the price that I paid for it.

Pompanos are marine fishes in the Trachinotus genus of the Carangidae family (better known as "jacks"). Pompano may also refer to various other, similarly shaped members of Carangidae, or the order Perciformes. Their appearance is deep bodied and mackerel-like, typically silver colored and toothless with a forked tail and narrow base. There are twenty described species and most are valued as seafood. Some species are considered prize delicacies and game fish.

Eating Tuna and Seafood While Pregnant

There are many myths about eating tuna and seafood during pregnancy. For first time mothers, it is but normal to listen to people who have experienced pregnancy. It is true that pregnant women should stay away from fish high in mercury (shark, mackerel, swordfish, tilefish). On the other hand, pregnant women should not stop eating seafood entirely for the whole nine months. It is actually SMART to eat seafood during pregnancy.

A scientific study was just released in which the findings show that women who skip seafood during pregnancy could be putting themselves in danger for depression. Researchers conclude that limiting the seafood consumption during pregnancy could be detrimental to optimal fetal development. It is actually found out that, mothers who eat the most seafood during pregnancy — more than 12 ounces per week — have children with the highest developmental outcomes. It was also found out that, women with the highest fish intake (2 ounces per day on average) had children 25% more likely to have higher developmental scores at 6 months and almost 30% more likely to have higher scores at 18 months. Therefore, eating healthy tuna is good for the health of the little one.

I know that tuna is healthy that is why when I was pregnant I never stopped eating one of my favorite tuna sandwich. Here's my very easy and simple recipe:

Ingredients:
1 small can tuna in chunks (drain)
mayonnaise
pepper
pickle relish
boiled egg (diced)
onion (diced)

Directions:

Mix altogether. Spread in a whole wheat bread.

"Kinilaw"

As my good friend Dhemz and her family are on vacation to the Philippines right now, I can't help but wish that I am in the Philippines too, enjoying the filipino foods that I missed.

I admit, when I see this picture in my brother's facebook, I was drooling. Anchovies (bulinaw) is not my first choice when it comes to "kinilaw" but right now, I will happily dig in to this.

The kalamansi alone makes me salivate...

Fish and Rice Flour Sticks

I have a lot of fish in my fridge and I am happy! The other day, I fried some fish but I was not able to eat them all. So that my leftover fried fish will not go to waste, I made another dish out of it. This dish is actually very common in the Philippines so obviously, I love it. This is actually a plain "pritong isda with misua".


Ingredients:
fried fish
rice flour sticks (misua)
oil
garlic
onion
green onions
tomato
pepper
salt
water

Directions:
  • Sautee garlic, onion, and tomato.
  • Add fried fish and add water and green onions.
  • Bring to boil and add rice flour sticks.
  • Season with pepper and salt. Cook until flour sticks are done.
  • Serve immediately.

Broiled Flounder

I never had flounder so Dave insisted that I should buy it. From the looks of it (and the price), I will not buy it. Flounder is a bit pricey but Dave insisted that I should try so we bought 1 Flounder fish.

Dave told me that he used to eat flounder and it is really good. He couldn't wait for me to try it. I wanted to grill it but since I have lazy bones in me (lol), I don't want to do the charcoal grilling for one piece of fish. I then decided to just broil it in the oven.

Ingredients:
1 Flounder
powdered garlic
garlic salt
pepper

Directions:
  • Preheat oven to broil
  • Put two slits on the body of the fish on both sides. Season the whole fish with garlic salt, garlic powder and pepper. Place in a cookie sheet.
  • Broil for 10 minutes. Turn over and broil some more.
  • Serve with dip ( a mixture of soysauce, vinegar, tomato, onion, pepper)




Note: Time of broiling varies so just keep on checking your oven.

Before we went home from our Mobile trip, we loaded up with a lot of fish and shrimp. It is cheaper in Mobile and there are a lot of choices. We are fortunate to find a seafood place that sells everything that I want... so take a look at what I bought...
